Highly aromatic, the catkins are harvested in late winter for their unique flavor and aroma, reminiscent of cardamom, clove and cinnamon. Notes of honey and rich in tannins.
CULINARY USE: For flavoring meats, sauces, vinaigrettes, and even desserts. Pairs well with wild meats and poultry. Great in couscous and chocolate desserts.
